APPLE CINNAMON PIE
This vegan pie is a mixture of apple and cinnamon. Like a dream and you will love it 🙂
INGREDIENTS (for a 22cm/8,7” springform tube cake pan)
for the dough
- 250 g spelt flour ( wholemeal)
- 150 g brown sugar
- 16 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- dash salt
- 2 tablespoons cinnamon
- 90 ml sunflower oil
- 200 ml soy milk without sugar
- 100 ml sparkling mineral water
for the filling
- 2 apples
- 2 tablespoons brown sugar
- 2 tablespoons cinnamon
also
powdered sugar
PREPARATION
- preheat the oven to 180° C
- dough:
- Mix the dry ingredients in a bowl
- Mix in all the liquid ingredients little by little
- Pour a little bit dough in the baking form ( about 1 cm/0,4”)
- Bake it for 10 minutes
- Peel the apples. Remove the core.
- Cut the apples in slices (0,5 cm/0,2”)
- Mix sugar and cinnamon in a little bowl
- Roll the apple slices in this mixtur
- Put them on the baked dough ( see the following picture)
- Pour the remaining dough over it ( see the following picture)
- Bake the pie for another 20-25 minutes (test for doneness with a toothpick )
- Let it totally cool down in the form
- Take it out of the form
- Put the pie on a plate
- Sprinkle it with powdered sugar
- Cut the cake
- Enjoy!
