ORANGE TARTLET
This vegan delicacy tastes fruity and light. The taste of chocolate and oranges harmonizes perfectly.
INGREDIENTS (for 4 pcs)
for the dough
- 100 g spelt flour (wholemeal)
- 75 g brown sugar
- 12 g cacao
- ½ teaspoon baking soda
- dash salt
- peel from 1 orange
- 40 ml sunflower oil
- 100 ml orange juice
- 75 ml sparkling mineral water
for the layer
- 75 ml orange juice
- 125 ml tap water
- 1 sachet Agatine = 10 g ( vegetable gelatin )
- 3 tablespoons soy yoghurt
- optional: sugar
also:
- orange jam
for decoration
- 100 – 150 g couverture
- 4 segments of orange
PREPARATION
- preheat the oven to 180 ° Celsius
for dough:
- mix all the dry ingredients together
- pour the liquid mixture into the dry mixture little by little
- put a piece of baking paper onto a baking tray
- put 4 mousse rings ( diameter 8 cm ) on it
- pour the dough into the rings
- bake it for 20-25 minutes ( test for doneness with a toothpick )
- take the tartlets out of the oven
- let them cool down inside the rings
- take the tartlets out of the rings
- cut them through by half ( horizontally )
- put the lower halves back into the rings
for the layer
- mix the Agatine with the water and the orange juice and bring it to boil
- let it simmer for 2 minutes
- stir in yoghurt ( and optional sugar )
- cool down for some minutes
next
- Brush the cake halves in the rings with orange jam
- pour the yoghurt-mixture onto the cake halves )
- put the upper cake halves onto it
- refrigerate the tartlets for at least one hour
- take them out of the rings and put them on a plate
decoration
- melt the couverture in a water bath
- pour it over the tartlets
- Add one segment of orange to each tartlet
- refrigerate the tartlets again for at least one hour
- Serve and enjoy!
