VEGAN CHOCOLATE LEMON MUFFINS
vegan, quick and easy recipe, refreshing in summertime, suitable for any party or children’s birthday party
INGREDIENTS ( for 24 mini muffins or 12 normal sized muffins )
- 200 g spelt flour (wholemeal)
- 80 – 100 g brown sugar (add to your taste )
- 30 g cacao
- 1 teaspoon baking soda
- juice and grated zest of one large lemon
- 80 ml sunflower oil
- 1 tablespoon vinegar
- 300 ml sparkling mineral water
PREPARATION
- preheat the oven to 180° C
- mix the dry ingredients in a bowl
- mix in all the liquid ingredients little by little
- pour this dough in paper muffin baking cups
- fill in as far as two-thirds of the height of the cups – dough will expand!
- bake them for 15 – 20 minutes (test for doneness with a toothpick )
- let them cool down
- optional: decorate them
