ASIAN STYLE SOUP
INGREDIENTS ( for 4 portions )
- 2 tablespoons oil ( preferably sesame oil )
- ¼ cabbage ( sliced in little pieces )
- 2 carrots ( cut in thin strips )
- 1 onion ( cut in half and then in thin slices )
- 70 ml soy sauce
- 1 zucchini ( sliced in little pieces )
- 200 g peas ( maybe deep frozen )
- 10 mushrooms ( quartered )
- 5 garlic gloves (finely chopped )
- a little chili flakes
- 750 ml vegetable stock
- salt, pepper
optional:
- wontons
PREPARATION
step 1
- let the oil get hot in a pot
- roast cabbage, carrots and onions for 5 minutes
- add salt and pepper
- blot it with a shot soy sauce
step 2
- add zucchini, mushrooms and peas and roast for 2-3 minutes
- add garlic and chili and roast for another minute
- blot it with 20 ml soy sauce
- let it roast for 1 more minute ( not longer !!! )
- pour in vegetable stock
step 3
- let it come to the boil
- pour in 40 ml soy sauce
- take from the stove and cover the pot
- let soup sit for 10 minutes
step 4
- fill the soup in bowls and optional add wontons
- enjoy!
