BAKED BEANS
This vegan variation has been a fixed component at our sunday brunch. My children love it.
INGREDIENTS ( for 1-2 portions)
- 1 can kidney beans
- 1 onion
- 4 tablespoons tomato paste
- 4 tablespoons paprika paste
- 1-2 tablespoons garlic powder
- salt
- pepper
- 1 tablespoon oil
- 125 ml water
optional: smoked tofu
PREPARATION
- Pour the beans over a sieve off
- Chop the onion
- Heat the oil in a pan
- Roast the onion gently
- optional:
- Cut the tofu in little pieces
- Roast it with the onion
- Add the beans
- Add the tomato- and the paprika paste
- Add garlic
- Stir it
- Pour the water over it and stir it
- Season to taste with salt and pepper
- Let it simmer for at least 45 minutes
- Stir it occasionally ( if necessary pour a little water over it)
- Enjoy with toast!
