BLACK FOREST TARTLET
INGREDIENTS ( 10 pcs )
for the dough:
- 250 g flour
- 180 g sugar
- 30 g cocoa
- 17 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- 135 ml sunflower oil
- 275 ml sparkling mineral water
for the cherries-cream:
- 1 jar of cherries
- 40 g sugar
- 5 tablespoon of cornstarch
- a bit of cold water
also:
- 200 ml vegan whipping cream
- 1 sachet whipping cream stabilizer
for decoration:
- some couverture
PREPARATION
step 1
- preheat the oven to 180 ° Celsius
step 2
- mix all dry ingredients together ( dough )
- pour the liquid ingredients into the dry mixture little by little
step 3
- put a sheet of baking paper on a baking tray
- put 10 mousse rings on it ( I took some in cardiac configuration )
- fil them one half each with dough
- bake it for 20 minutes ( test for doneness with a toothpick )

- let them cool down inside the rings

- for the cream pour the cherries, collect the juice
- boil the juice with the sugar
- mix the cornstarch with water
- stir it into the juice
- fold the cherries ( without the pits ) in the juice-mixture ( lay 10 cherries for decoration aside )
- let the cream cool down

- whipp the whipping cream with the whipping cream stabilizer ( yes, indeed 🙂 )

- take the tartlets out of the rings
- cut them through by half ( horizontally )

- put whipping cream on the lower halfs
- put some cherries-cream on it
- put the upper tartlet halves onto it
- and again put whipping cream and cherries-cream on it
step 9
- melt the couverture in a water bath
- pour it over the tartlets
- let it set
step 10
- decorate each tartlet with a bit of whipping cream and one cherry
