QUICK COCOS MUFFINS
This vegan delicacy is quick and easy made. Ideal when unexpected visitors are standing in front of your door. Only 5 minutes of work!
INGREDIENTS ( for 12 muffins)
- 250 g spelt flour
- 120 g brown sugar
- 100 g desiccated coconut
- 16 g Weinstein baking powder ( cream of tartar or any other vegan baking powder
- 130 ml sunflower oil
- 170 ml sparkling mineral water
- 200 ml rice milk with coconut
- desiccated coconut for spreading the muffins
PREPARATION
- preheat the oven to 180° C
- Mix the dry ingredients in a bowl
- Mix in all the liquid ingredients little by little
- Pour the dough in 12 paper muffin forms
- Bake it for 25 minutes (test for doneness with a toothpick )
- Let them cool down
- Spread with a little desiccated coconut
- Enjoy!
