SEMOLINA DUMPLINGS
This vegan variation of a classical Viennese/Bavarian soup vegetable is one of my favorites. I love it 🙂
INGREDIENTS
- 90 g vegan butter
- 300 ml water
- 210 g semolina
- 1 tablespoon soy flour + 2 tablespoons water
- 1-2 teaspoons salt
- 1 teaspoon pepper
- A bit of nutmeg
PREPARATION
- Melt the butter
- Add water and semolina
- mix soy flour with water
- Add to semolina mass
- Stir till you get a thick pulp
- season to taste with salt, pepper and nutmeg
- Let it rest for about 15 minutes
- Form dumplings
- Let steep in vegetable soup for 5-10 minutes
DON’T BOIL, OTHERWISE THE DUMPLINGS WILL FALL APART !!!
- Serve with the vegetable soup
