STRAWBERRY-RAINBOW CAKE
INGREDIENTS (for a 16 cm/abt. 6 inches spring form)
for the bottom layer:
- 35 g peeled almonds
- 50 g vegan butter
- 50 g zwieback ( twice toasted white bread)
for the white layer:
- 100 g vegan sour cream
- 100 g soy yoghurt
- 25 g sugar
- 100 g vegan whipping cream ( whipped)
- 200 ml cold water
- 1 sachet Agatine = 10 g ( vegetable gelatin )
for the pink layer:
- 125 g strawberries
- 25 g sugar
- 100 g vegan sour cream
- 50 g soy yoghurt
- 100 g vegan whipping cream ( whipped)
- 200 ml cold water
- 1 sachet Agatine = 10 g ( vegetable gelatin )
for the red layer:
- 150 g strawberries
- 1 tablespoon sugar
- 200 ml cold water
- 1 sachet Agatine = 10 g ( vegetable gelatin )
for decoration:
- 100 g strawberries
PREPARATION
step 1
for the bottom layer:
- roast the almonds in a pan WITHOUT oil
- take it out, let it cool down and chop coarsely
step 2
- melt the butter in a little bowl
- crumble the zwieback
step 3
- mix the almonds and the zwieback with the butter
- press the mass into the spring form
- refrigerate for 30 minutes
step 4
for the white layer:
- mix the Agatine with the water and bring it to boil
- stir in sour cream, yoghurt, sugar and whipping cream
step 5
- pour it onto the bottom layer and flatten it
- refrigerate for 30 minutes
step 6
for the pink layer:
- hull the strawberries ( or simply cut of the green), chop them and purre them with the sugar
step 7
- mix the Agatine with the water and bring it to boil
- stir in sour cream, yoghurt, strawberry/sugar pulp and whipping cream
step 8
- pour it onto the white layer and flatten it
- refrigerate for 1 hour
step 9
for the red layer:
- hull the strawberries ( or simply cut of the green), chop them and purre them with the sugar
step 10
- mix the Agatine with the water and bring it to boil
- stir in the strawberry/sugar pulp
step 11
- pour it onto the pink layer
step 12
for decoration:
- simply cut of the green of the strawberries
- put them carefully into the pink layer
- refrigerate the cake for 2 hours
step 13
- put out of the form
- cut the cake in pieces
- enjoy !
