CALDO VERDE ( Portuguese national dish )
Vegan variation of a delicious soup with its own flavor.
INGREDIENTS ( for 3-4 portions )
- 1 large onion ( hashed )
- 4 -5 garlic gloves ( cut in slices )
- 400 g potatoes ( peeled and cut in little cubes )
- tablespoon virgin olive oil
- 1000 ml vegetable stock
- 1 vegan hot sausage
- 300 – 400 g wild cabbage ( cut in narrow stripes)…see picture on the end of the recipe
- pepper
- virgin olive oil
PREPARATION
- Heat the oil in a large pot
- Fry onion and garlic for 2 minutes
- Add potatoes and fry for another 2 minutes
- Infuse with vegetable stock
- Add vegan sausage
- Let it simmer for 30 minutes
- Remove the sausage and put aside
- Mash the potatoes to thicken the soup
- Add gabbage stripes and let the soup simmer for another 5 minutes
- Cut the sausage in slices
- Put the soup into soup bowls
- Serve it with the sausage slices and virgin olive oil
