QUAIL BEANS SOUP
Vegan, quick made, cost-effecient and realy tasty. This mixture of vegetables, beans, tofu and sour cream will inspire you.
INGREDIENTS (for 2 portions)
- 500 ml water
- 3 carrots
- 1 yellow turnip
- piece of celery
- 1 parsley root
- 500 g quail beans pods
- a bit of parsley
- a bit of lovage
- 2 middle-sized potatoes
- salt
optional:
- a bit of chive
- 100 g smoked tofu
- oil
- vegan sour cream
PREPARATION
- Trigger the bean pods
- Peel the vegetables and cut in little pieces
- Bring the water to boil
- Add the beans and the vegetable ( EXCLUDED THE POTATOES)
- Cook it for 10-15 minutes ( the beans should be NEARLY soft)
- Add the potatoes pieces and cook for 7-10 minutes more.
- Flavor the soup with salt
- Pour the ready soup in two bowls
optional:
- cut the tofu in VERY little pieces and fry it in oil.
- Cut the chives.
- Add the tofu and the sour cream
- Sprinkle it with cives
- Enjoy!
