THREE FRUITS – ONE CAKE
I submitted this cake to PETAs vegan Baking-Contest 2016. It has not become a Top 10 place but maybe you like the recipe and you want to bake it.
INGREDIENTS
for the dough
- 250 g spelt flour (wholemeal)
- 120 g brown sugar
- dash salt
- 17 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- mark of 1 vanilla bean
- 200 ml soy milk without sugar
- 100 ml sunflower oil
- 50 ml sparkling mineral water
- 5 tablespoons soy yoghurt without sugar
for the yoghurt layer
- 200 ml water
- 1 sachet Agatine = 10 g ( vegetable gelatin )
- 6 tablespoons soy yoghurt
- brown sugar everyone to his taste
for the glaze layer
- 250 ml water
- 1 sachet vegan glaze
- brown sugar everyone to his taste
besides
- 2 bananas
- 200 g blueberries
- 8-10 hardy kiwis or 2 kiwis
- blueberry jam
PREPARATION
- preheat the oven to 180° C
- Put a sheet baking papaer on a baking tray and put a square cake frame on it OR put a sheet baking paper in a spring form
for the dough:
- Mix the dry ingredients in a bowl
- Mix in all the liquid ingredients little by little
- Pour the dough in the baking frame or the spring form
- Bake it for 20-25 minutes (test for doneness with a toothpick )
- Let it totally cool down
- Spread the cooled dough with blueberry jam
- Cut the bananas in narrow slices
- Put the slices close together on the jam
for the yoghurt layer:
- Mix the Agatine with the water and bring it to boil. Let it simmer for 2 minutes.
- Stir in yoghurt ( and, if you want some sugar)
- let it cool down for 1 minutes
- Pour the yoghurt mass onto the banana slices
- Cut the hardy kiwis in slices ( if you use kiwis: peel and cut them in slices)
- Put the blueberries and the kiwi slices onto the yoghurt layer
- Refrigerate for at least 30 minutes
for the glaze
- Mix the glaze ( and, if you want some sugar) with the water and bring it to boil. Let it simmer for 1 minute.
- Let it cool down for 5 minutes
- Pour it over the cake
- Refrigerate for another 30 minutes
- Took the cake out of the cake frame/ spring form
- Cut in pieces
- Enjoy!
