BANANA CAKE
INGREDIENTS
for the dough:
- 125 g spelt flour ( wholemeal)
- 60 g brown sugar
- 8-9 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- a pinch of salt
- 50 ml sunflower oil
- 100 ml soy milk without sugar
- 50 ml sparkling mineralwater
for the layer:
- a little bit of apricot jam
- 1-2 bananas
- 500 ml soy milk
- 1 parcel vanilla custard powder
- optional: sugar for the pudding
also (for decoration)
- 1-2 bananas
- 200 g chocolate or couverture
PREPARATION
step 1
- preheat the oven to 180 ° Celsius
step 2
- for the dough
- mix all dry ingredients together
- pour the liquid ingredients into the dry mixture little by little
- pour dough into the cake tin
- bake it for 25 minutes ( test for doneness with a toothpick )
- let it totally cool down inside the cake tin
step 3
- take the bottom out of the tin
- spread the jam on it
- put it on a place and surround it with a cake ring
step 4
- cut the bananas in thin slices
- put them on the flan case
step 5
- cook the pudding ( according to instructions)
- put it on the banana layer
step 6
- let it cool down completely
step 7
- melt the chocolate/couverture in a water bath
- pour it over the cake
step 8
- cool it for at least 1 hour
step 9
- take it out of the cake ring
- enjoy it 🙂
