MINI STOLLEN
This little vegan variation of a classic is the perfect present for your family or friends. Or you bake it for yourself 🙂
INGREDIENTS (for 35-40 pcs)
- 250 g spelt flour (wholemeal)
- 20 g yeast
- 60 ml lukewarm soy milk
- 3 tablespoons brown sugar
- 8 g vanilla sugar
- dash salt
- 1-2 teaspoons toweled lemon zest
- 120 g soft vegan butter
- 150g raisins
- 50 g candied orange peel
- 50 g candied lemon peel
- 50 g minced almonds
also
- 100 g vegan butter
- powdered sugar
PREPARATION
- Put flour in a bowl
- Make a hole in the centre and add the yeast
- Stir it with some milk and some flour from the edge
- Let the sponge rest covered for 30 minutes
- Knead the sponge with all other ingredients
- Let it rest covered for 30 minutes
- Preheat the oven to 180° C
- Put a sheet of baking paper on a baking tray
- Form rolls out of dough and divide in 35-40 portions
- Form little stollens out of the portions and put them on the baking tray
- Bake for 20 minutes
- Melt the butter
- Turn the stollens ( still warm) in the butter
- Put them on a plate
- Sprinkle with powdered sugar
- Let them cool down
- Enjoy!
TIP: keep the stollens in a cookie jar, they taste almost every day better 🙂
