CHOCOLATE COCONUT LINGONBERRY MUFFINS
This vegan blend of tart, exotic and fruity is a dream come true.
INGREDIENTS (for 12 muffins )
- 200 g spelt flour
- 130 g brown sugar
- 100 g coconut flakes
- 35 g cocoa
- 1 teaspoon baking soda
- 1 tablespoon vinegar
- 90 ml sunflower oil
- 300 ml sparkling mineral water
- 12 tablespoons lingonberry jam
for decoration

PREPARATION
- Preheat the oven to 180° C
- Mix the dry ingredients in a bowl
- Mix in all the liquid ingredients little by little
- Put paper forms in a muffin plate
- Fill 2 tablespoons dough in each muffin form.
- Put 1 tablespoon lingonberries onto it and 1 tablespoon dough over that.
- Bake them for 25 – 30 minutes (test for doneness with a toothpick )
- Let them cool down
- Decorate them with lingonberry jam and coconut flakes
- Enjoy!
