ROAST APPLE MUFFINS
These vegan muffins shortened me the pre-Christmas season. They will also taste you because they are so juicy and delicious.
INGREDIENTS (for 12 muffins)
- 2 apples
- 40 g brown sugar
- 50 g raisins
- 60 g almond paste (cliced in cubes)
- 1 teaspoon lemon juice
for dough
- 250 g spelt flour ( wholemeal)
- 100 g brown sugar
- 17 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- 100 ml sunflower oil
- 200 ml soy milk
- 100 ml sparkling mineral water
for decoration
- vegan whipped whipping cream.
- Powdered sugar
- cinnamon powder
PREPARATION
- preheat the oven to 180° C
- Wash apples, dry, quater and pit them, dice
- Caramelize the sugar in a pan
- Toss apples and raisins in it
- Take the pan from the oven
- Add almond paste and lemon juice
for the dough
- Mix the dry ingredients
- Pour in the liquid ingredients little by little
- Fold in the apple mixtur
- Put paper forms in a muffin plate
- Fill 3 tablespoons dough in each muffin form.
- Bake for 20-25 minutes (test for doneness with a toothpick )
- Let them cool down

- decorate with whipped whipping cream
- Sprinkle with powdered sugar and cinnamon
- Enjoy!
