JACKFRUIT MUFFINS
These vegan exotic muffins are very juicy and fruity, the taste is reminiscent of mango and lychee.
INGREDIENTS (for 12 muffins)
- 200 g spelt flour (wholemeal)
- 100 coconut blossom sugar
- 9 g Weinstein baking powder ( cream of tartar or any other vegan baking powder )
- 1/2 teaspoon baking soda
- 150 ml soy milk without sugar
- 75 ml sunflower oil
- 100 ml sparkling mineral water
- 1 can jackfruit in syrup
PREPARATION
- preheat the oven to 180° C
- mix the dry ingredients in a bowl
- mix in all the liquid ingredients little by little
- teem the jackfruit and drain it
- Puree half of the fruits
- Cut the other half in little pieces
- Stir both halves in the dough
- Put paper forms in a muffin plate
- Fill 3 tablespoons dough in each muffin form.
- Bake it for 20 minutes (test for doneness with a toothpick )
- let them cool down
- Enjoy!
