PLUM DUMPLINGS
This is the vegan variation of a typical Austrian sweet main dish/sweet dish.
INGREDIENTS (for 12-15 dumplings)
- 1000 g floury potatoes
- 300 g grippy flour
- 1 knife point salt
- 1 tablespoon soya flour
- 3 tablespoons water
- 12-15 plums
- 1 tablespoon vegan butter
- 2 tablespoons sugar
- 3-4 tablespoons breadcrumbs
- optional: powdered sugar
PREPARATION
- Cook the potatoes quite soft
- Peel them when they are still hot/warm
- Reduce them to a pulp
- Mix soya flour and water
- Add flour and soya flour-water mixtur to the potatoes
- Knead it till you get a smoothy dough.
- Remove the core of the plums
- Divide the dough in 12-15 portions
- Take1 portion in your hand and flatten it
- Put a plum in the middle
- Form a dumpling
- Do the same with the other dough portions
- Bring salted water in a large pot to boil
- Put the dumplings into the water
- Reduce the temperature
- Let the dumplings simmer for 15 minutes
- In the meantime melt the butter in a pan
- Heat the sugar and the breadcrumbs till it is golden brown
- Take the dumplings out of the water
- Roll them in the roasted breadcrumbs until totally covered
- Optional: sprinkle with powdered sugar
- Enjoy!
