QUICK LENTIL SOUP
It is a good idea to make more of this vegan soup… the next day it tastes even better 🙂
INGREDIENTS (for 2 portions)
- ½ – 1 leek
- 200 g carrots
- 150 g red lentils
- ½ onion
- 2 tablespoons oil
- 500 ml vegetable stock
- salt
- pepper
- ½ tablespoon sugar
- ½ – 1 tablespoon vinegar
- 2 vegan sausages
PREPARATION
- Cut leek in rings
- Peel the carrots, divide it lengthwise and cut it into slices
- Chop the onion
- Heat the oil in a pot
- Braise the vegetables for 4 minutes
- Add lentins and vegatable stock
- Let it simmer for 7 minutes
- Cut the sausages in slices
- Add to the soup and let it simmer for another 5 minutes
- Season to taste with salt, pepper, sugar and vinegar
- Enjoy!
