vegan, quick and easy recipe, refreshing in summertime, suitable for any party or children’s birthday party

INGREDIENTS ( for 24 mini muffins or 12 normal sized muffins )

• 200 g spelt flour (wholemeal)
• 80 – 100 g brown sugar (add to your taste )
• 30 g cacao
• 1 teaspoon baking soda
• juice and grated zest of one large lemon
• 80 ml sunflower oil
• 1 tablespoon vinegar
• 300 ml sparkling mineral water

PREPARATION

• preheat the oven to 180° C
• mix the dry ingredients in a bowl
• mix in all the liquid ingredients little by little
• pour this dough in paper muffin baking cups
• fill in as far as two-thirds of the height of the cups – dough will expand!
• bake them for 15 – 20 minutes (test for doneness with a toothpick )
• let them cool down
• optional: decorate them
