WATERCRESS SOUP
INGREDIENTS (for 2 portions)
- 250 g watercress
- ¾ bunch parsley
- 1 large sized onion
- 200 g potatoes
- 500 ml vegetable stock
- salt
- pepper
- kummel
- 2 tablespoons oil
optional: vegan cream
PREPARATION
- Peel and dice the onion and the potatoes
- Heat the oil in a pot
- Sweat the onion and potatoes
- Deglaze it with the vegetable stock
- Let it simmer for 20 minutes
- Pick the herbs
- Add it to the suop
- Let it simmer for another 5 minutes
- Puree the soup
- Flavor with salt, peper and kummel
optional: add vegan cream
