POTATO DUMPLING HALF HALF
This is the vegan variation of a good and solid plain fare. You will love it.
INGREDIENTS (for 6-7 dumplings)
- 250 g cooked floury potatoes
- 500 g raw floury potatoes
- 75 ml lukewarm soy milk without sugar
- 1-2 tablespoons potato starch
- salt
- nutmeg
PREPARATION
- Grate the raw potatoes
- Squeeze them through a cloth, collect the potato water in a bowl and let it rest for 10 minutes (the starch will sink to the bottom)
- Mash the cooked potatoes
- Mix it with milk
- Add the squeezed potatoes
- Pour the potato water off and add the leftover starch and the potato starch to the dough
- Season to taste with salt and nutmeg
- Form dumplings out of the dough
- Bring salted water in a pot to boil
- Reduce the temperature
- Put the dumplings into the water
- Let them infuse for 25-30 minutes (DON’T BOIL THEM OTHERWISE THEY WILL GET OVERCOOKED)
- Took them out of the water
- Enjoy!
