Vegan variation of a delicious soup with its own flavor.

INGREDIENTS ( for 3-4 portions )

• 1 large onion ( hashed )
• 4 -5 garlic gloves ( cut in slices )
• 400 g potatoes ( peeled and cut in little cubes )
• tablespoon virgin olive oil
• 1000 ml vegetable stock
• 1 vegan hot sausage
• 300 – 400 g wild cabbage ( cut in narrow stripes)…see picture on the end of the recipe
• pepper
• virgin olive oil

PREPARATION

• Heat the oil in a large pot
• Fry onion and garlic for 2 minutes
• Add potatoes and fry for another 2 minutes
• Infuse with vegetable stock
• Add vegan sausage
• Let it simmer for 30 minutes
• Remove the sausage and put aside
• Mash the potatoes to thicken the soup
• Add gabbage stripes and let the soup simmer for another 5 minutes
• Cut the sausage in slices
• Put the soup into soup bowls
• Serve it with the sausage slices and virgin olive oil
• Enjoy!
