Vegan, quick made, cost-effecient and realy tasty. This mixture of vegetables, beans, tofu and sour cream will inspire you.

INGREDIENTS (for 2 portions)

• 500 ml water
• 3 carrots
• 1 yellow turnip
• piece of celery
• 1 parsley root
• 500 g quail beans pods
• a bit of parsley
• a bit of lovage
• 2 middle-sized potatoes
• salt

optional:

• a bit of chive
• 100 g smoked tofu
• oil
• vegan sour cream

PREPARATION

• Trigger the bean pods
• Peel the vegetables and cut in little pieces
• Bring the water to boil
• Add the beans and the vegetable ( EXCLUDED THE POTATOES)
• Cook it for 10-15 minutes ( the beans should be NEARLY soft)
• Add the potatoes pieces and cook for 7-10 minutes more.
• Flavor the soup with salt
• Pour the ready soup in two bowls

optional:

• cut the tofu in VERY little pieces and fry it in oil.
• Cut the chives.
• Add the tofu and the sour cream
• Sprinkle it with cives
• Enjoy!
