POTATO GOULASH SOUP
This is the vegan variation of a traditional potato dish which is given a spicy taste by some aromatic sausages.
INGREDIENTS ( for 2-3 portions)
- 2 hot sausages ( see recipe: http://traudavegan.com/en/hot-sausages/ )
- 5-6 medium-sized potatoes
- 2 onions
- 4-5 freshly pressed garlic gloves
- 1- 1 ½ tablespoons grounded kummel
- 3-5 tablespoons paprika
- ½ – 1 tablespoon marjoram
- 500 ml vegetable stock
- 2 tablespoons oil
PREPARATION
- Cut the sausages in slices, the onions in pieces and the potatoes in cubes
- Heat the oil in a pot
- Sear the sausage slices
- Add the onion and roast both for another 2-3 minutes
- Add the potatoes cubes and roast all for another 3 minutes
- Add the garlic
- Add the spicery
- Infuse the vegetable stock
- Let the soup simmer for at least ½ hour
- Enjoy with fresh dark bread!
